Recipe for Gluten-Free Chocolate Brownies
FEATURED

Tis post was first published on 17 April 2017 and was updated & republished on 25 May 2019 Gluten-free baking can be tricky. Getting a light and airy sponge or a soft and bouncy loaf is damn hard without the magic of gluten. Brownies, though, brownies are a whole different story. I always think gluten-free baking lends itself well to the things that are supposed to be a little bit soggy (moist, if you like). Lemon drizzle is excellent without gluten, for example, as are chocolate chip cookies. I have been inundated with birthdays and special occasions this month –

Peanut Caramel Blondies
FEATURED

I’ve made all sorts of gluten-free vegan brownies and blondies over the years, and these caramel peanut ones are some of my favourites. Their centre, they’re thick and gooey and (dare-I-say-it) moist. But the sugar caramelises just so, to give a solid, crunchy crust at the edges, and on the top. Vegan caramel sauce The vegan caramel sauce is perfect for these blondies, but could also be used in all manner of desserts and cakes – drizzle some over your vegan ice cream, or in between the layers on a caramel cake. How to make brownies extra gooey in the

Vegan & gluten-free tempura batter with purple sprouting broccoli
FEATURED

This gluten-free and vegan tempura batter works for anything that calls for tempura. Coat a mixture of seasonal veggies before frying them all. Try making tempura with mushroom, courgette or even tofu. Tempura has a long history in Japanese cuisine, though it is thought to have been introduced to Japan by the Portuguese. Tempura refers to vegetables (or sometimes fish) cooked in a specific batter and deep fried. Traditionally, this batter would be made from wheat flour and eggs, whipped up in very small batches with chopsticks. The idea is to keep some lumps of flour in the batter, which

Vegan & gluten-free skillet cookie
FEATURED

Love cookies? If you eat gluten-free, it can be hard to find a cookie recipe that actually tastes like cookies. Soft in the middle, crunchy-brown on the edges and oozing with chocolate chips, this gluten-free and vegan chocolate chip cookie recipe is exactly what your inner cookie-monster has been craving. This could also make an easy last-minute dessert to serve up for your vegan gluten-free friend – it’s so good you can serve it to everyone, so there’s no need to make up a ‘special’ vegan and gluten-free dessert. The recipe is loosely based on a gluten-free cookie recipe I

vegan and gluten-free doughnut recipe
FEATURED

I’ve posted gluten-free doughnut recipes before. My glazed gluten-free doughnuts are kinda healthy – made with coconut, rice flour and ground almonds and baked in the oven, instead of frying. Now, don’t get me wrong, they are delish – tasty and sticky and sweet – but sometimes the healthy version isn’t what we want. Eating plant-based and gluten-free can sometimes feel like you’re on a permanent ‘diet’. Especially when eating out, the gluten-free & vegan option is all-too-often a salad or a stew. And I mean, I love salads. I love a plate full of vegetables & colour & flavour.

Gluten Free Baked Donuts
FEATURED

I haven’t had a glazed doughnut since around 2014, but passing a donut shop in town the other day just gave me a craving for them. Glazed donuts are a sticky, sugary pleasure. They’re also made with wheat flour, eggs & milk – definitely not gluten-free or plant-based. But people avoiding gluten and animal products shouldn’t miss out on the fun. I developed this glazed donut recipe for my sister’s birthday – she loves a classic Krispy Kreme glazed dozen – and it has her seal of approval. These  gluten-free baked donuts have a slightly heavier texture than a regular

Vegan frappe iced coffee smoothie
FEATURED

This vegan frappe is really my ‘treat’ smoothie. It’s definitely not breakfast – more like an iced coffee (though the addition of oats does make it very filling). Coffee & chocolate are a perfect match for oats, and it even manages to include a portion of fruit. You can get more breakfast smoothies here, like this classic tropical green smoothie or this pink smoothie with berries & almonds. This vegan frappe recipe is perfection on a hot day – drinking blended, creamy iced coffee reminds me of long, hot summer days on the beach. The first holiday I took with

Recipe for pink smoothie
FEATURED

I’m definitely an advocate of smoothies for breakfast (when the weather is warm enough to leave my porridge behind). A pink smoothie like this one though, makes a great snack, too. I often work on my blog and freelancing in the evening, after I get home from work, and a smoothie at 5:30 when I get in sets me up for a few more productive hours before a late dinner If its the ‘green’ that puts you off smoothies, berry varieties are the way to go. This one is such a bright, jewelled pink, it looks more like a dessert

simple recipe for green smoothie
FEATURED

I often have smoothies for breakfast (especially in the warmer months). I know a green smoothie isn’t real breakfast (in the way that a bowl of hot porridge or a couple of rounds of buttered toast are). But sometimes I’m in a rush and I just want to kneck a few of my five-a-day and get on with my morning. It literally takes me about 3 minutes to get breakfast sorted when I start the day with a smoothie. This (or some variation on it) is my ‘standard’ day-to-day smoothie. I’ll usually take a green smoothie into the office with
