As most of you know, I’ve been oscillating recently between healthy eating, to make sure I look my best on the beach (in two weeks) and at my wedding (in seven weeks) and stress-eating baked goods like there’s no tomorrow (hello, super-gooey brownies + no-fuss cheesecake). So this week I’m sharing a quick packed lunch […]
Meatless + Gluten-Free Recipes
I love love love the local food and drinks scene here in Leeds, but sometimes I like to cook at home for friends and family too. Being a gluten-intolerant vegetarian, all the dishes created here are Meatless Gluten-Free Recipes.
I believe that restricted diets don’t mean that you should be missing out, so you can find plenty of delicious dishes here on the EatsLeeds recipe page. All my recipes are vegetarian and gluten-free, with a mix of simple healthy options, and a few more indulgent treats.
Most of my Meatless Gluten-Free Recipes are great for sharing. The best meals are full of friends and family and laughter, where everyone brings a dish and we all share in, be that a tapas-style dinner with a bottle of wine, or a long, lazy brunch with a bottomless coffee.

No-Fuss Gluten-Free Cheesecake
One of my best friends (and my best man at my wedding) is a real meat-lover. Now, don’t get me wrong, he will eat vegetarian, but he’s never met a rib or a steak he didn’t like. Which can make it difficult, sometimes, for us to bond over food. Luckily for me, he is also an […]
Vegetarian Pad Thai Recipe
I’ve been on a bit of a health kick lately - I was shocked and alarmed to realise the other day that my wedding is only 10 weeks away - ten! I try to treat eating and health in a fairly holistic way. I’m a woman human, so my weight fluctuates and I don’t always […]
Super-Gooey Gluten-Free Chocolate Brownies
So, I’ve been inundated with birthdays this week. My Mother-in-law of the future, my sister-in-law of the future, AND my sister’s partner all had birthdays. So, it has definitely been time for some cake. I’ve shared another gluten-free chocolate brownie recipe in the past. But that recipe never came out quite indulgent enough for me. […]
Best-Ever Gluten-Free Pancakes
Who doesn’t love pancakes for breakfast? Since going gluten-free I’ve missed pancakes on lazy Sunday mornings. Needless to say, I’ve done a bunch of experimentation to come up with this gluten-free pancakes mix. My best-ever gluten-free pancakes are super simple (and - bonus - laden with peanut butter). Just like last weeks’ recipe for a simple homemade […]
Three Ways with Simple Homemade Humous
Humous is one of my all-time favourite food groups (and don’t you try to tell me that humous isn’t a food group, because it is definitely part of my food pyramid). Recently, I’ve been experimenting with my simple homemade humous recipe, to showcase a few variations on the classic. So, you might be aware that […]
Lime and Roasted Aubergine Curry Recipe
My mama makes a mean aubergine curry. This isn’t her recipe, its my own version, but it is divine (If I do say so myself). I’m going to be honest: for some reason this dish took more attempts than normal to develop. Like way more. I wanted it just right and it kept coming out not-quite. I finally […]
Easy Broccoli Salad with Chickpeas and Quinoa
This easy broccoli salad just goes right in the centre of the Venn diagram marked “healthy” “delicious” and “can be whipped up in 20 minutes” Seriously, it is so easy to throw together when you’re pushed for time and need something healthy and delicious on the table in between finishing one thing and scurrying off […]
5-Minute Moroccan Vegan Salad
How to Make a Moroccan Vegan Salad in 5-Minutes Flat This post was kindly sponsored by Jamie’s Italian. I’m loving getting back to making and eating some fresh, delicious dishes after the food madness of December. This Moroccan vegan salad makes a super healthy lunch, packed with vegetables, chickpeas and olive oil, and it can […]
Simple Gluten-Free Granola Recipe
Learn how to make homemade gluten free granola, with this super simple granola recipe So, first post of January! There is something about the start of a new year that is just exciting, isn’t there? Though I’m not one for setting resolutions, exactly. I hate the pressure people put on themselves to overhaul their whole […]
